super healthy banana bread recipe

For awhile now, I have been trying to get my family away from processed food (including unhealthy oils, white flour, and sugar).  I made a new recipe today and had to share it.  It is from a great website called: www.100daysofrealfood.com.  The only thing I did differently was add 1/4-1/3c. unsweetened applesauce to the batter as it seemed a little to dry.

Whole-Wheat Banana Bread

Ingredients

  • 2 ¼ cup whole-wheat flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 ripe bananas, mashed
  • ¼ cup plain yogurt
  • ¼ cup honey
  • 2 eggs
  • 1/3 cup oil (I used melted coconut oil)
  • 1 teaspoon vanilla
  • 1/4-1/3c. unsweetened applesauce

Directions

  1. Preheat oven to 350 degrees F and grease pan.
  2. Whisk together the flour, baking soda, and salt.
  3. In a separate bowl mix mashed bananas with yogurt, honey, eggs, oil, and vanilla.
  4. Fold the banana mixture into the flour mixture until blended. Do not over mix.
  5. Pour batter into prepared pan or muffin tins.
  6. Bake large loaf for 40 – 50 minutes or until it comes clean with a toothpick.  Bake muffins for 16-18 minutes.
Other notes:  I buy organic whole white wheat flour at Natural Grocers by my house (in the refrigerated section).  I would not recommend making this with a bag of wheat flour off the shelf of a regular grocery store.  The bags in the grocery store have been sitting for a long time and the wheat has lost most of its nutritional value.   Plus, white whole wheat is a little softer grain...

Finally a muffin recipe I can feel good about feeding my family regularly.
